Two days of lovely spring weather! The rain has come at night, the snow has been in the mountains. Perfect!
- Another crazy day today. It's ten before I even get to the blog. BUT, I've accomplished a whole task list already this morning. Teacher Conference in a bit, game night tonight, seven errands to run between now and then, plus dinner, laundry and perhaps getting the house ready for company and making some hushpuppies for the girls.
- The saddest thing I've ever seen... this sign went up across the street yesterday. The pasture where my horse friends have lived and entertained me for 12 years now is listed for sale. I highly doubt someone will purchase the land to put a horse on it. Sadness. On the flip side, a few new homes would mean a few new neighbors and friends.
- Holy cow! I just realized that yesterday was How To Tuesday and I didn't how to anything!
I'm such a slacker! Here's a quick how to make a nummy quick and easy dinner: Using a rice cooker, add about two and a half cups of rice, some salt and enough water to just cover the rice. Then, touch the top of the rice with your finger and add two digits of your finger more of water. Our Japanese friend showed me how his grandmother always used the "two finger rule" for perfect rice. As soon as the rice cooker switches over to warm, UNPLUG it! Nummy! Put about 4 tbsp. soy sauce, 4 Tbsp. of cornstarch, 1/2 cup of brown sugar and about four cups of water in a saucepan. Stir and bring to a boil. Add some chopped cooked chickenbreast. Steam some fresh brocolli. Serve a bowl full of rice, covered with the steamed broccoli and smother in the soy sauce with chicken. Dinner! Voila! Off the top of my head, that's one of our favorite quick meals! Our current bushes are budding. I had strawberry shortcake for breakfast. I've walked twice this week, so far. It's feeling like spring may be coming... that is, the Utah spring, which means only about fifteen more snowstorms before we put the pool up on Labor Day and then wait until July 1st to start swimming! Happiness!
- Mom called to ask me what Doug thought of the cobbler she brought over. We never had a chance to talk about it last night. She asked what Doug said about a purchase we are making. I never had a moment to ask. She asked what we were planning on doing for something else. We haven't had time to discuss it yet. Hmmmm. What did we talk about last night? I thought about it. In the few minutes that we had in passing, not much. I think we need to go on a walk together tonight just to say hello!
- With all the to do lists and the appointments here and there and running that's going on, you'd think that it's May already! Life is busy, but good! I may actually sit down long enough to write a real sentiment here in the next few days.
The most effective way to do it is to do it!
I think it is crazy how it still snows in Utah until almost May! The two-finger rule is not one I know. I will have to see if it works better than my 1 cup more of water rule (it doesn't always work with certain types of rice). Hope you get everything done today! Love the quote.
