My day didn't go exactly as I'd expected it to. When I went to leave to run my errands and meet Denise at Chili's, my Expedition wouldn't even turn over. I'm guessing that Mr. Nobody left something on inside the truck. Doug's been trickle charging it since he got home. Denise came to pick me up, we went to lunch and that's it for my productive day.
Carol and her daughter, Taylor, came over for dinner and we watched Castle, Season 2. We'd been trying to get together to watch this all summer. Finally, at the end of the summer, we have one more disc and we're ready for Season 3 to come out in DVD next month. Cool beans!
For dinner tonight, I had some leftovers that needed to be put to use. I'd made Crockpot Italian Chicken and had half the chicken left, so I made my roll dough, rolled it out like a cinnamon roll and then shredded the chicken. I spread the chicken on the dough, added a ton of shredded cheese and rolled it up like a cinnamon roll. Then, I remembered the recipe that I first tasted in 1979, which I thought would be a great addition to this...make a gravy using a can of cream of chicken soup, a can of milk and 8 ounces of cream cheese. Simmer it but don't boil. I baked the roll-ups for fifteen minutes at 350 and then served it with the sauce/gravy poured over it. Oh my! It was tasty. My tummy didn't like it, which I expected, but my tastebuds sure did! A quick and easy dinner that everyone loved! Try it, you'll like it!
Here's the recipe for the Chicken. I'm sure that I've shared it but if you've never tried this recipe, it's a simple, delish way to prepare chicken.
Crockpot Italian Chicken
Chicken Breasts or Tenders
1 package Italian Seasoning Mix (I use generic brand)
1 can of cream of chicken soup
1/2 cup of butter
Put chicken in crockpot and add the rest of the ingredients. Toss. Cook on high for about 4 hours or low for about six. Thirty minutes before serving, add 8 ounces of cream cheese. Serve over rice or pasta. Rice is our favorite! Walk an extra mile in the morning!

- If you like Big Macs, McDonalds is offering "Buy One, Get the Second for a penny" all day Thursday. I'll pass!
- I received the new Close to My Heart Catalog yesterday in the mail. CTMH has hooked up with Cricut and I may have a new "need". $100 for the product but it's enough to make me want to start scrapbooking again! WOW!
- Continued prayers for Liza and Buddy are appreciated! They had some good luck in the job hunting and things are looking positive! Thanks so much!
- We've got Zaylee overnight. Kelly sees her doctor tomorrow for the first time since she had the infection and emergency room visit a few weeks ago.
- One week from tomorrow, the babes are back in school! They've gone from "I'm not ready for summer to end!" to "I can't wait!!!" in the past few days.

I know what I'm making on Monday, my first day back at school and the off to my own classes. It sounds wonderful. If your family likes Mexican try putting the chicken breasts (they can/should be frozen), add a jar of your favorite salsa and let cook. Fork shred the chicken and add some of the salsa from the pot to make it as wet as you like. Serve either on a bed of lettuce or as tacos. It's one of my favorite go to meals.
