The peaches are ripening beautifully and they are HUUUUGE this year! It's a first for this tree. BUT. I can no longer eat my favorite dessert in the whole entire world, so I got busy and found this recipe for a Homemade Peach LOW-FAT Ice Cream. There's no cream at all in it and it was so delish! You'd never know it. I think we'll probably have to try this again with other fresh fruits in the future. Everyone loved it! It made about two quarts. AND it was gone before I got a picture of it, so you just get a shot of the peaches instead!
3 Cups ripe chopped peaches (freezing peaches before making the ice cream
expedites the process of making the ice cream)
1 Package Knox Gelatin
1 Can evaporated milk
1/2 Cup sugar
1/2 Teaspoon vanilla
Blend together milk, sugar and vanilla. Put the package gelatin in one-half cup of water. Heat them together in the microwave and stir it till the gelatin is fully dissolved. Add the gelatin to the ingredients in the blender. Blend. Add the peaches a little at a time to the blender. Then, put into your icecream maker and freeze! It only takes about twenty minutes for a soft icecream. You'll never know there's no real cream in it! Enjoy!!

As for the rest of our weekend, we worked in the yard, put the summer stuff away, Doug and Quayd went on an overnight campout with the scouts, the girls had an overnighter at Nana's. I had the house to myself and studied my lesson, plus had Carol over for two episodes of Castle. We're almost done with Season 2. It was just a casual weekend.
We kept Zaylee overnight last night and took her to church with us. She loves going to the nursery. She fell asleep during dinner after church. It's a long day for a two year old. She's such a pill and I love having her here. It was fun to watch her and Miki sit together for a bit in church. You'd never guess that the two of them are related at all! ;) I tried to take a picture of Zaylee this morning before church and she wouldn't hold still for two seconds! I love being a grammie!
That's it for this Sunday night! I'm exhausted and calling it a weekend! Life is good!
