It was a busy and active weekend. On Friday, Doug and I went out for lunch and then hit Lowes for some housepaint and supplies to get busy painting the trim on the outside of our home. It's not done yet, but sixteen man hours into it, it's looking good. Tomorrow, the gutters, two more doors and trim on the back of the house. Sheesh! We thought that we could do this in a day, two at the most. Day three is tomorrow and it will be a miracle to get half way through it but it's supposed to rain on Tuesday, so we'll be hustling to get as far as we can.
Plus, since we've worked all weekend and took the Sabbath day off, the babes have been promised a reward, so Doug will be taking them to a matinee of Harry Potter. I'll stay home to paint some more since I'm not a HP fan. My mom teased Doug that it is called "Labor Day". For Doug, it is. He teased me tonight that he was hoping to get called into work so he could have a day off from his "to Do" list at home. It's not a big list... just paint the house. ;)
My big news, that wasn't mine to share yet is that my niece, Tessa, is officially engaged and she's asked me to be her wedding planner. So, my next few months will be busy preparing for her wedding! Saturday, we spent a couple hours going to a florist, choosing her colors, making some initial plans. I'm very excited and absolutely love her fiance, Kellan. Tessa is the sister of Tyson, my nephew who was married a few weeks ago. That's a lot of happiness in one family in such a short time! My brain is going crazy with ideas for the wedding, the shower I'll be hosting and the festivities around it all! Can't wait!
This week will be busy and crazy... here's a few things off the to do list/calendar:
- host a little gathering at home
- finish up all arrangements for my NC trip next week
- finish painting the house
- walk 30 miles
- make a decision on a possible "business venture" with a friend
- help Quayd prepare to give the lesson to his age group of boys next Sunday
And lastly, this tasty recipe that taste like real Belgian waffles.... It's great for preparing the night before and making a great breakfast quickly before the kids get off to school!
Make them tonight, enjoy them in the morning waffles
1 tsp. yeast
4 cups flour
2 Tbsp. sugar
1 tsp. salt
4 cups warm milk
1 cup butter, melted and cooled (I add mine to cool the milk that I've just heated)
1 tsp. vanilla
4 large eggs
Tonight: Combine the dry ingredients. Stir butter and vanilla into the slightly warm milk. Stir the dry ingredients to the milk mixture in a large bowl. (It will thin.) Cover with plastic wrap and the cover that with dish towel. Leave the bowl on a baking sheet in the oven overnight with the oven light on. In the morning, the batter will have risen and then fallen.
In the morning: Preheat your waffle iron and butter or oil it, if needed. Separate the eggs and gently beat the yolks, then stir them into the batter. Beat the egg whites until soft peaks form; gently stir and fold them into the batter.
Spoon the batter into a hot waffle iron. Cook and enjoy! This recipe makes about a dozen waffles.
So far, it's been a great weekend, other than my possible broken toe. (Doug thinks it is, I just think it hurts a lot. Note to self: Don't drop chairs on unprotected toes. Doug also said today, "I wish I could take you pain and have my toe hurt instead. And he meant it. I adore my sweetheart. He meant it.) I'm excited to finish the house and take some pictures. It looks so much better, be it ever so humble. I love long weekends! Life is good!

Tessa is blessed to have you as a wedding planner, I am sure your head must be full of awesome ideas! Belgian waffles... Sounds good for breakfast but I need to buy a good waffle iron, mine has to be replaced and until then I won't attempt any new waffle recipes!
