Pumpkin Apple Cake
1/2 cup butter, melted
2 eggs
1 1/2 cup sugar
1 3/4 cup flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1/4 tsp. ground cloves
(OR 1 1/2 tsp. pumpkin pie spice instead of spices)
1 cup canned pumpkin
1/2 cup apple juice
1/2 cup crushed pecans
Cream butter, sugar and eggs until sugar is dissolved. Mix and stir in dry ingredients. Add pumpkin and apple juice. Bake at 350° in a bundt pan for 45 minutes. Cool before removing from pan. Glaze with 1 cup powdered sugar and 1-2 tbsp. of apple juice. Also very good with raisins baked in.
Ten ingredients for a GREAT weekend breakfast dish! Make it the night before and it only takes about two minutes of effort before tossing in the oven in the morning. Great for company too!
BAKED FRENCH TOAST
1 loaf French Bread (cut into 1" cubes)
8 eggs
3 cups milk
2 tbsp. sugar
1 tsp. vanilla
dash of salt
Place bread in a well-buttered 9x13 inch pan. Mix eggs, milk, sugar, vanilla and salt in blender. Pour over the bread, cover and refrigerate over night. Take out of fridge half an hour before baking.
1/4 cup of cold butter
1 tbsp. cinnamon
1/4 cup sugar
Mix cinnamon and sugar. Dot the bread mixture with pieces of cold butter. Sprinkle the cinnamon sugar over the top. Cover with foil. Bake at 350° for 45 minutes. Let stand for about five minutes before cutting or it will appear uncooked. Add Syrup, powdered sugar or Jam! ENJOY!
Sweet Cornbread 2 cups yellow corn meal
2 cups flour
1 1/4 cup sugar
2 Tbsp. baking powder
2 tsp. salt
2 cups milk
2/3 cup corn oil
3 eggs
Preheat oven to 400°. Mix dry ingredients. Add remaining ingredients. Mix until all ingredients are wet but do not over mix. Bake 20 minutes (until golden on top and a toothpick comes out clean) in a buttered jelly roll pan or a 9x13 pan for thicker cornbread. Serve warm. (You can also use a bit less sugar and add shredded cheese and a can of diced chilies to it for a zesty flavor! MMMM! You can also make them into muffins.
