I woke up this morning and thought it was Wednesday. It felt like I'd slept that long! I'm sure it's because my knee didn't keep me awake all night! HAPPINESS!! I got the injection. And it hurt! BUT, I'm so glad that I did! If the first day is any indication of what it will do, I'm very hopeful. I slept last night better than in months! For most of the day, it felt like I was still getting a shot. Strange. The doctor said that I'll feel this "shot pain" for two or three days. I'll be getting #2 on Monday and then a third shot the week after that. I'm hopeful!!!
I can't believe how many email requests I had for Natalie's Super Bowl Sandwich. Seriously, as Doug said, it is the best sandwich ever!!! I've copy and pasted Nat's email, so here it is in her words. DIVINE, in mine!
Super Bowl Sandwiches
In a bowl combine:
1 small can chopped olives
1/2 tsp chili powder
1/2 tsp ground cumin
1/4 tsp salt
Set aside 2 Tbsp of this mixture.
Add the following to the remainder:
1/2 cup sour cream
1/2 cup mayo
1/3 cup chopped green onions
****Note**** From my years of making these, I usually double the mayo/olive dressing and use about 12-14 slices of french bread, but as it's written is the original recipe.
Place 8 (1 inch) slices of french bread on an ungreased baking sheet.
Layer sandwiches this way:
1 Tbsp mayo mixture
Thinly sliced deli turkey (1 or 2 folded slices)
Tomato slices
Another Tbsp mayo mixture
Avacado slices (3 or so per sandwich)
Grated cheddar cheese
Grated jack cheese
Sprinkle of the remaining olives
Bake 350 degrees for 15 minutes or til hot and melted.
An adult will want 2. A teenage boy will want 3.

This morning, I've already had my gas meter changed, taken seven phone calls, made four, done the morning routine, gotten ready, returned the floor covering samples and made three appointments. It's been one of those! I'm off to the races to continue with a busy Tuesday. I do love scheduling everything on the busiest day of the week so that I can slow down a bit on the others. Doug says, "Yeh, right." (hee-hee) I'm out of yard! I feel a Hobby Lobby run coming on! Life is good!
