The girls and I have been discussing this for a few weeks. Since Grace has the biggest bedroom in the house and the new queen mattress and ZJ has the smallest bedroom in the house with the most personal belongings (the joys of being a crafter) plus she is sharing her room with Zaylee...this weekend, we made a decision to trade bedrooms completely. Yesterday, we spent the day making the switch with furniture and decor. We'll spend the next two days doing closets and drawers. Happiest comment of the day... Grace, who was reluctant at first to give up the big room and two closets, but so happy after the change, said, "I used to think that dejunking was evil, but now I think it's a blessing!" (Watching Hoarders may have changed her tune! ;) )
3 cups of all-purpose flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon powder
6 very ripe large bananas, mashed
1 3/4 cup sugar
1/2 cup vegetable oil
1 tsp. vanilla
Sift together the flour, baking powder, baking soda, cinnamon and salt; set aside. Combine bananas, sugar, egg, vanilla vegetable oil in a large bowl. Fold all together gently. The mixture should still be lumpy. Do not overmix, so that the muffins stay light in texture. Fill muffin pans/cup linings 2/3 full. Sprinkle a touch of brown sugar on the top of each muffin. Bake in preheated oven at 400'. Bake regular muffins for 10 minutes and large muffins for 25 minutes until they spring back when touched. Enjoy!
