Doug was away for a few days in SLC for the National Melaleuca Convention. I stayed home with the kiddos this time. I had to laugh at the text messaging that was done by my husband's new talent of texting. I'm sure that predictive text is very confused by his funny verbage. Doug has a language of his own. He cracks me up!
The kids and I did our own thing... Quayd had a sleepover with three friends. The girls and I had a good time...cooking some, playing some, napping and suntanning some. Grace is already brown! We all went to Pizza Pie Cafe for dinner on Friday and McDonalds for lunch (aka Diet Coke for me) on Saturday. Doug returned home on Saturday evening and we had a great reunion. The funniest part of his reunion was us all racing to the door and me calling out, "Nope! Nope! I'm first!" Doug said that was the best welcome home ever. I've always felt that being apart every now and then helps a couple appreciate each other more when they reunite, but seriously, I no likee when he is away!
Church was awesome yesterday! My friend, Liz gave a beautiful lesson. It moved me to tears. I loved her lesson. I love Liz! My lesson went well. It was a good day.
Yesterday for dinner, I made Lettuce Wraps, which the kids go nuts over. This is SO not a kid food but my kids love them! I doubled the recipe and every single bite was gone! Carol asked me to share the recipe, so here it is, and seriously, it's a must-try! One note: The recipe calls for ground chicken breast but , instead, I deboned and chopped a roasted chickens from the grocery store. I used the whole deboned chicken and doubled everything else below.
1 pound ground chicken breast
1/2 medium purple onion, minced
salt and pepper
2 large cloves of garlic
1 inch of fresh ginger, peeled and chopped or the equivilant of powdered ginger
Heat the chicken, onion, salt and pepper in a large non-stick skillet or wok. Cook until the chicken is done. (Since I had a pre-cooked chicken, I sauteed the onions in a tablespoon of oil, then added the chicken and cooked it a bit more.) Add the garlic and ginger and continue cooking until the onions and chicken are cooked.
In a separate bowl, mix the following. Then put it in the microwave for about 30-45 seconds until you can stir it until it's smooth.
1 tbsp. sesame oil
2 1/2 Tbsp. soysauce
1/2 Tbsp. water
1 Tbsp. peanut butter
1/2 Tbsp. honey
4 tsp. Rice Vinegar
2 tsp. chili garlic sauce (THIS is HOT!! I only used 1 tsp. for the double recipe and it still has LOTS of kick!)
dash fresh pepper
Pour this sauce over the skillet mixture and stir.
Then:
3 green onions
1/2 can of sliced water chestnuts, drained and chopped
1/4 cup chopped peanuts (I double-doubled the nuts.
12 outer Lettuce Leaves (I use Romaine)
Add chopped green onion and peanuts, the cook until the green onions are soft and the wather chestnuts are heated through.
When I made them yesterday, I realized that I was out of water chestnuts. So, instead, I shredded about 2 cups of raw carrots and served them inside the wraps. Every shred of carrot was eaten. I think I actually prefer them this way better. (And carrots are more nutritious.) Seriously, a healthy, low cal meal that is De-LISH! When kids who aren't huge onion fans and don't really love speecy-spicy love it, it's a must-try! Enjoy!
Lunch with Natalie, doctor appointment this afternoon and the verdict watch for the Jodi Arias trial today. Praying for justice. Family Home Evening and Dancing with the Stars tonight. More bridal shower prep and planning. Life is good.
